Day 2
I forgot to eat breakfast. This is a recent trend which is SO unlike me, because usually I want to eat constantly. This is also bad, because it is not healthy to skip a meal like that. I mean I still get my calories, but it needs to be spread out and balanced.
The problem is I am not a morning person in any sense of the word. Travis wakes up and has sunshine beaming out of his ass, and I am a groggy, awkward, disheveled mess. I sleep as long as possible, meaning I am out of bed and out the door in 15 minutes flat (I am a night showerer.) I usually eat breakfast in the car, or I eat and sip a cup of coffee as I chill, waiting for my chick-lets to arrive at school.
Recently, I am getting stuff together or talking to coworkers instead of eating and chilling. If I got to school 5 minutes earlier, I would have more time. But then I have to wake up 5 minutes earlier, and that sounds like death. Soooo I haven't gotten to that point yet.
Anyways. Counting calories today has been good. I love MFP. It is the business. Why it took me this long to get on that is bananas.I love the nutrition part. It is mega hard to get all the calcium I need though. Same with Vit C. Pretty much all that stuff down at the bottom of the nutrition screen. I need to work on that. I'll just do my best for now, but this weekend or next week I need to investigate more.
I did come across some left over MilkDuds in my car. I glared at them, cursing the 5 left in the box, and through them to the squirrels. I am going to have some hyper squirrels at recess tomorrow.
Also, our Realtor, Anna Garcia, (who btw is the best EVER and if you are ever looking for someone in STL, hit her up) dropped off some of her homemade peach empanadas as a late Christmas gift. These, I cannot throw to the squirrels. These are like sex on a plate, serious. I will eat one damn it. And work out at some point to make up for it.
So Travis and I meal planned for this week. I used the website www.skinnytaste.com to find meals and make a grocery list. I love this website. It was created and is maintained by Gina Homolka. She is fabulous. I used it when I was on Weight Watchers too. She has the WW points and nutritional information on there. AND what is amazing is that most of her stuff is already on MFP.
So for this week, we will be cooking 3 Meals by Gina. They are as follows:
Tuesday
Slow Cooked Sweet Barbacoa Pork over Fiesta Lime Rice with a side of Warm Corn Salad, making it a 502.8 calorie meal. A pretty big meal, yes, but oh so yumtastic.
Thursday
Skinny Baked Broccoli Macaroni and Cheese with a side of String Beans with Garlic and Oil, making it a 411.9 calories meal.
Friday
Chicken Rollatini with Spinach alla Parmigiana with a side of Broccoli and Cauliflower Salad with Capers in Lemon Vinaigrette (minus the Capers for us...) and half a of a Mixed Greens with Apples, Pecans, Craisins with a Honey Goat Cheese Dressing salad, making it a 414.8 calorie meal.
Gina also takes lovely photos of her food, and that is what you see above!
So those are the meals we will definitely be cooking. I am super crazy excited!! If you haven't ever used Skinnytaste, I highly recommend you check it out!!
So now we just have to work out. It's totally not going to happen tonight. We had to go the the grocery store. Tomorrow though, for sure, I plan on working out for a half hour. I can come home, work out, cook. Then off to Chavas.
