February Week 3: Meal Planning and Prep System
Onwards to week 3!!
So there you have it! I am going to make chicken salad at some point this week for a lunch...I have an entire chicken I need to use for that lol. Thank goodness is freezes well.
So this week we kept the things that worked from last week and added the missing pieces (aka prep past chopping veggies.) I had wanted to try to plan using all the left over ingredients that we had, but I only go half way there. The stuff that is left will hold up fine.
We weren't able to cook all 5 meals last week. Sunday we randomly made pizza, since it was easy and I had been chopping veggies. So I transferred the chicken lime bowls with peanut sauce to this week. We will have that tomorrow. So this week we only planned for 4 meals (including the carried over meal) since we didn't get to it all last week.
One thing I am not sure I brought up was that Travis's work supplies him with lunch everyday since he is one of the few employees who goes into the office everyday. This means he often brings home left overs that we end up having for dinner. So we typically have at least one night a week where that coveres us. Then one or two night where we just eat whatever or left overs.
What we are having for dinner this week:
1. Chili with kale butternut squash salad (salad carried over from last week)
2. Lime chicken bowls with pot stickers (carried over from last week)
3. Ribs with broccoli slaw brussel sprouts and Butternut squash (carried over from last week)
4. Warm sale and quinoa salad with stuffed greek chicken
I also had planned on trying to be more mindful of my lunches and planning some out...but as I sit here after all the planning, shopping, and prep, I super don't feel like it. Sooooo not gonna happen.
I got started this week prepping around 5:30, and finished up around 7:30. We did more prep this time, which included veggies, but also meat prep, AND a breakfast prep.
I also had a SUPER CUTE prep assistant who chatted with me the whole time from his lion chair.
I cut all the veggies, fruit, and chicken. Travis cooked the ground beef and sausage for the chili and worked with Em on the cilantro. This is what we prepped:
Chili:
Onion (.5)
Shredded Carrot (2)
Chopped zucchini (1)
cooked ground beef and Italian sausage (1 pound each?)
Lime Chicken Bowls
Cut up chicken
Veg prepped last week
Warm Kale Salad and Stuff Greek Chicken
julienned red pepper (1)
julienned carrots (2)
julienned radishes (4)
cleaned & prepped cilantro
sliced tomato (1)
sliced zucchini (1)
sliced lemon (1)
sliced red onion (.5)
Ribs with Broccoli Slaw and Veggies
Didn't have to do anything : ) Veggies prepped from last week, broccoli slaw STUPID easy, ribs are from a BBQ joint here in STL, cooked and frozen, just need to be warmed up.
Breakfast Fruit to be put over oatmeal
3 apples
2 pears
frozen cranberries
Cooked with spices
Lunch Veggies (4 large servings for a 4 day work week)
Carrots
Bell Peppers
English cucumber
