February Week 3: Meal Planning and Prep System

Onwards to week 3!! So this week we kept the things that worked from last week and added the missing pieces (aka prep past chopping veggies.) I had wanted to try to plan using all the left over ingredients that we had, but I only go half way there. The stuff that is left will hold up fine.  We weren't able to cook all 5 meals last week. Sunday we randomly made pizza, since it was easy and I had been chopping veggies.  So I transferred the chicken lime bowls with peanut sauce to this week. We will have that tomorrow. So this week we only planned for 4 meals (including the carried over meal) since we didn't get to it all last week.  One thing I am not sure I brought up was that Travis's work supplies him with lunch everyday since he is one of the few employees who goes into the office everyday. This means he often brings home left overs that we end up having for dinner. So we typically have at least one night a week where that coveres us. Then one or two night where we just e

February Week 2 Outcome: Meal Planning and Prep System

So this week went really well! We have had PLENTY of food, and probably too much! I forgot some of the vegetables one evening (bah!) and we still had tons to eat. I also have been able to take some left overs here and there for lunch!  So, here is just a recap of what worked and what didn’t.  Google Keep This was awesome. I really enjoyed using it to help keep everything organized, and I was also able to share all the lists with Travis. So he was able to pick it up and know what to do if I was wrangling kids. He actually ended up cooling two of our dinners, which was awesome. I think having something set up that is easy for either one of us to pick up and run with was key, especially with having the kids to contend with.  Prep So I only ended up prepping the veggies—so much chopping! I wish I had also gotten the chicken trimmed and cut up, because that always take me time and it’s not my favorite thing to do. February Week 2: Meal Plan and Prep System

  Hey friends!   I am a day late, HOWEVER. I have news.   My 4 month old ACTUALLY kind of sort of slept last night. Up at 12:00, 3:00, and 4:30, then I woke him up to get ready for the day. It previously was 10:30, 12:00, 2:00, 4:00 and 6:00.   So. Winning.   All this to say, that I actually got some sleep this weekend, meaning I was able to catch up with me “get your shit together” adult time, and got our meal plan done and prepped. Also laundry and vacuuming happened. More winning.     Meal Plan and Prep Week Two   There are a couple phases to this plan.   Phase One: Saturday- What the hell are we going to eat? (10 minutes) For this phase, I start by talking to Travis about things either one of us really wants this week, and if nothing pops up, we choose off of our typical meal list (a running list from Google Keep) or look at my Pinterest board of recipes. February Week 1: Meal Planning and Prep System

  Hey everyone!   So I am hella late with posting this goal and blog post. Theo started his 4 month sleep regression HARD and it has now been 14 days since I have gotten more than 2.5 hours of uninterrupted sleep. I think one magical night I got a 3 hour chunk. But that’s it.   SO! Without further ado, February’s goal is:   Create and use a meal planning and prep system! Truth be told, I have been looking into this a lot the last couple months, especially in preparation for going back to work full time when having two children and trying to eat healthy unprocessed foods.   I also was able to, for this week, take advantage of the fact that I have the MOST AMAZING MOTHER EVER and have all our meals be from the stash of freezer meals she made for us when she was here for 8 weeks when Theo was born.   Yes. You read both of those things correctly. And yes. I do in fact have the best and most bad ass mother around.   Needless to say, eating fresh cooked healthy meals is a crap ton of work. I

January Goal Week 4: Only Buying Things I Need

So here we are in the last two days of this month’s Goal: the no more buying things I don’t need goal.  I have to say, I have been a big fan of this goal. It’s really slowed me down, and I have had fun taking my time picking out what I’d like to buy. Gives me time to really look around at options and research more about my choices. It also makes ordering things much more exciting. I feel like before I’d be like “I want this!” all month and want as aware of what I was spending or getting. I think I may keep this going, just alter it a bit. I’m going to wait to buy the things I don’t need until the end of the month. That way I have to keep going slow. I don’t need to get my wanted things right away. AND if I just do one order of desired items a month, I’ll be more aware of how much I am spending on things for hobbies and fun. So this shall continue.  Be on the look out for next month’s goal! Will be posting an announcement about it Monday! 

January Week 3: Stop Buying Stuff Update

Soooooo I missed last week’s update—my bad. We had a crazy weekend and then every time I thought about writing an entry, something exploded and I’d get distracted.  So here we are at the completion of week three of only buying things I need goal. And I’ve got to say, I’ve actually really enjoyed the challenge.  I have absolutely had to stop myself from buying things over the last two weeks and sometimes, it's been hard. Someone would talk about a product and I’d want it and then have to stop myself from buying it.  Sometimes I’d be like “Sweet!! You are a productive and strong person for stopping yourself from making that unnecessary purchase!”  Other times I’d say “Mother effer, why did you make this god forsaken goal—give me my freaking Treat Yo’ Self mug and fancy hot coco mix—TAKE MY MONEY FOOLS!!!!” Then I’d get strange looks from my boss or whoever was around and they’d pretend to not know me.  The cool thing that has happened is this: There have been many things brought up i

Week 1: Stop buying stuff Update

I am honestly surprised I am only a day off for posting my first week update. How did this magic happen?? So! It's been one week since I have bought anything I didn't NEED (school supplies, groceries, and spices have been purchased.) The day after I made this pledge to myself, I had to go get some spices that we were out of. I like to get them from Penzy's, a super awesome spice store over on Manchester. If you haven't been, go. Quality spices makes all the difference in cooking.  Anyways, when I was out, I passed 5 different stores I wanted to go into. All 5 stores would have been full of things I absolutely did NOT need. However, all awesome stores, and many of them small businesses which I will eventually absolutely support. One of my goals down the line is to support one small business a week. But we'll get there.   It is also not a good idea to just be wandering around stores right now because I am bored or need to decompress, you know, because of Covid.  But t

A Goal for Every Month of 2021: January

Ohai!  So it's been quite some time since I have updated here. A lot has changed in my life (new position at my school, I have two kids, I am half way through my 30's to turn 40.)  This is me with my offspring, messy hair and all: I’ve been thinking that I have been SO busy that I am kind of just going from day to day. I haven't been living my life as thoughtfully or mindfully as I'd like.  So last night, as I was staying up too late to give myself more me time, because as a mother of two late at night is my main quiet time (which leads me to getting less sleep-BUH-but thats ok), I randomly had this thought: I am going to set a New Years Resolution to achieve a goal each month this year. A goal that will make me feel happy, fulfilled, and more present.  So, a couple things. 1. I love lists. Checking something off a to do list gives me a lot more pleasure than I'd like to openly admit. So creating a goal that I can work towards and check off sounds delightful. The ul
